Niagara Peach Bellini

1 bottle Ontario sparkling wine, chilled
3 medium Niagara peaches, peeled and chopped
1 tbsp lemon juice
1 tbsp sugar
Splash of water
1/2 pint raspberriesĀ 

1. Blend peaches, lemon juice, sugar and water till smooth. For an extra smooth consistency you can strain the puree. Spoon a tablespoon or so into each glass.
2. Blend raspberries (fresh or frozen), reserving a few for garnish.
3. Spoon 1/2tsp - 1 tsp of raspberry puree into each glass.
4. Add sparkling wine, garnish with a frozen raspberry and enjoy!
