Green Bean, Tomato and Basil Bake

Serves 4-8, Recipe courtesy of Ecosource Mississauga

1 1/2 lbs fresh, local green beans (about 4 cups)
1/2 teaspoon salt
about 3 cups local cherry tomatoes or quartered tomatoes
1 1/2 cups mozzarella cut into cubes
4-6 fresh, local basil leaves, sliced thinly
1 clove local garlic, crushed (optional)
1 cup grated parmesan or asiago cheese
1/2 cup breadcrumbs
2 tablespoons butter
2 tablespoons olive oil

Preheat oven to 375 degrees Celsius. Steam beans for 5-10 minutes or until just tender. Toss the parmesan and bread crumbs together in a small bowl. Sprinkle 1/4 cup of the mixture over the bottom of a lightly-oiled 2-3 quart baking dish. When beans have cooled, toss with tomatoes, mozzarella, basil, (garlic), salt and olive oil. Add to baking dish and cover with remaining bread crumb mix. Cut butter into small pieces and scatter over top. Bake 25 minutes or until top is lightly browned.
